Blue Sage was started by Jon Watts in January 2015. It was initially set up to offer a private chef experience for private dinners and small events. Since January we have cooked for everything from barbecues, christenings, weddings, corporate events, intimate dinners for two and private dinners for up to 50 people.
In October 2015, we invested in a catering trailer. Street food has become ever popular over the last couple of years, and we decided we wanted a piece. Jon’s strEAT food was born! In November of 2015 we set up market in Hitchin, Hertfordshire. Find us there serving different types of Chili with homemade flatbreads every Tuesday and Saturday. The rest of the time you can find us on St. Peters Street, St. Albans.
Jon came from a disadvantaged background and life wasn’t falling in his favour, at age 18 he looked destined for a life of failure. That’s when he bacame involved with the Duke of Edinburgh’s Award. Cutting a very long story short, Jon gained cooking qualifications and valuable experience in the kitchen. He was awarded his Gold DofE award in 2011.
Jon states “My eyes and soul were opened to the wonderful world of food. A fire was started inside of me and I am extremely grateful to have found what I am passionate about.”
While working towards his NVQ, he started work as a commis chef at one of Jamie Oliver’s first Italian restaurants. He worked for the Jamie Oliver restaurant group for six years. Over his time he grew as a person and a chef and held high positions in the company. He was an integral part in the openings and training of chefs in brand new restaurants.
To add to Jon’s experience he was able to cook for Jamie and his filming crew at his house in Essex during the filming of his TV series ‘Comfort Foods’. More recently Jon was chosen to provide the catering for Jamie and his crew, this time at Southend Pier whilst they filmed for Jamie and Jimmies Friday Night Feast.
To add to Jon’s experience, in 2014 he spent a few days with Raymond Blanc at his two michelin starred restaurant Le Manoir aux Quat’Saisons, as well as a couple of days in the kitchen at Murano in Mayfair with renowned chef Angela Hartnett.
Jon’s aim is to spread his passion for food as well as his love for inspriring young people to achieve the most they possible can.
